The Best Gluten-Free Birthday Cake Recipe (Moist, Fluffy, Easy)

A Birthday Cake That Happens to Be Gluten-Free


Every celiac knows the disappointment of a "gluten-free cake" that's dry, crumbly, and tastes like sawdust. This recipe is different.


We tested this cake 12 times until we nailed a version that's:

    What You Need


    For the Cake

  • β€’2 1/2 cups GF 1-to-1 flour blend (we use King Arthur Measure for Measure)
  • β€’1 3/4 cups granulated sugar
  • β€’1 tbsp baking powder
  • β€’1/2 tsp salt
  • β€’4 large eggs, room temperature
  • β€’1 cup whole milk, room temperature
  • β€’1/2 cup vegetable oil
  • β€’1/4 cup sour cream (the secret ingredient!)
  • β€’2 tsp pure vanilla extract

  • For the Buttercream Frosting

  • β€’1 cup (2 sticks) unsalted butter, softened
  • β€’4 cups powdered sugar
  • β€’2-3 tbsp heavy cream
  • β€’1 tsp vanilla extract
  • β€’Pinch of salt
  • β€’GF sprinkles for decorating

    Step-by-Step Instructions


    Step 1: Prep the Pans

    Preheat oven to 350Β°F (175Β°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, and grease again. This ensures clean release.


    Step 2: Mix Dry Ingredients

    Whisk together the GF flour, sugar, baking powder, and salt in a large bowl.


    Step 3: Mix Wet Ingredients

    In a separate bowl, whisk eggs, milk, oil, sour cream, and vanilla until completely smooth.


    Step 4: Combine (Don't Overmix!)

    Add the wet mixture to the dry mixture and fold together until just combined. Stop the moment you don't see dry flour. Overmixing = gummy, dense cake.


    Secret step: Let the batter rest for 10 minutes. This lets the GF flour fully hydrate and the xanthan gum activate. Skip this and you get crumbles.


    Step 5: Bake

    Divide batter evenly between pans. Bake for 28-32 minutes until golden on top and a toothpick comes out clean.


    Do not open the oven for the first 25 minutes β€” GF cakes are more fragile while rising.


    Step 6: Cool Completely

    Cool in pans for 10 minutes, then flip onto wire racks. Cool completely β€” at least 1 hour. Cutting a warm GF cake = instant crumble disaster.


    Step 7: Make the Frosting

    Beat softened butter on high for 3 minutes until pale and fluffy. Add powdered sugar one cup at a time, beating between each addition. Add cream and vanilla, beat until smooth. If too thick, add more cream 1 tsp at a time.


    Step 8: Assemble

    Place first layer on a plate. Spread a thick layer of frosting on top. Add second layer. Frost the top and sides. Add sprinkles and any decorations.


    Pro tip: Refrigerate the frosted cake for 30 minutes before serving. The frosting sets and makes cutting cleaner.
