A Birthday Cake That Happens to Be Gluten-Free

Every celiac knows the disappointment of a "gluten-free cake" that's dry, crumbly, and tastes like sawdust. This recipe is different.

We tested this cake 12 times until we nailed a version that's:

  • ✅ Moist for 3+ days
  • ✅ Fluffy (not dense)
  • ✅ Easy — one bowl, no special techniques
  • ✅ Tastes BETTER than most regular cakes
  • ✅ Nobody can tell it's GF

  • This is the cake that changed our opinion about gluten-free baking.

    What You Need

    For the Cake

  • 2 1/2 cups GF 1-to-1 flour blend (we use King Arthur Measure for Measure)
  • 1 3/4 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream (the secret ingredient!)
  • 2 tsp pure vanilla extract

  • For the Buttercream Frosting

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt
  • GF sprinkles for decorating

  • ---

    Step-by-Step Instructions

    Step 1: Prep the Pans

Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, and grease again. This ensures clean release.

    Step 2: Mix Dry Ingredients

Whisk together the GF flour, sugar, baking powder, and salt in a large bowl.

    Step 3: Mix Wet Ingredients

In a separate bowl, whisk eggs, milk, oil, sour cream, and vanilla until completely smooth.

    Step 4: Combine (Don't Overmix!)

Add the wet mixture to the dry mixture and fold together until just combined. Stop the moment you don't see dry flour. Overmixing = gummy, dense cake.

Secret step: Let the batter rest for 10 minutes. This lets the GF flour fully hydrate and the xanthan gum activate. Skip this and you get crumbles.

    Step 5: Bake

Divide batter evenly between pans. Bake for 28-32 minutes until golden on top and a toothpick comes out clean.

Do not open the oven for the first 25 minutes — GF cakes are more fragile while rising.

    Step 6: Cool Completely

Cool in pans for 10 minutes, then flip onto wire racks. Cool completely — at least 1 hour. Cutting a warm GF cake = instant crumble disaster.

    Step 7: Make the Frosting

Beat softened butter on high for 3 minutes until pale and fluffy. Add powdered sugar one cup at a time, beating between each addition. Add cream and vanilla, beat until smooth. If too thick, add more cream 1 tsp at a time.

    Step 8: Assemble

Place first layer on a plate. Spread a thick layer of frosting on top. Add second layer. Frost the top and sides. Add sprinkles and any decorations.

Pro tip: Refrigerate the frosted cake for 30 minutes before serving. The frosting sets and makes cutting cleaner.

Why This Recipe Works (The Science)

  • Sour cream — adds fat and acid, which keeps the cake moist and tender
  • Oil + butter — (oil in cake, butter in frosting) = moist crumb + rich flavor
  • Room temp ingredients — mix more evenly, preventing lumps
  • Resting the batter — lets the GF flour fully hydrate
  • Don't overmix — prevents the gummy texture that plagues GF baking

  • ---

    Variations

  • Chocolate cake: — Replace 1/2 cup flour with cocoa powder, add 1/4 cup more sugar
  • Lemon cake: — Add zest of 2 lemons to batter + 2 tbsp lemon juice to frosting
  • Funfetti: — Fold 1/3 cup GF sprinkles into the batter before baking
  • Cupcakes: — Fill liners 2/3 full, bake 18-22 min. Makes ~24 cupcakes
  • Sheet cake: — Use a 9x13 pan, bake 30-35 min

  • ---

    Storage Tips

  • Room temperature: — 2-3 days (covered)
  • Refrigerated: — 5-7 days (bring to room temp before serving)
  • Frozen: — Up to 3 months (wrap layers individually in plastic wrap + foil)
