  • 2.5 cups GF flour
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 1 egg + 1 yolk
  • 1 tsp vanilla, 1/2 tsp almond extract
  • 1/4 tsp salt

  • Cream butter + sugar. Add eggs + extracts. Mix in flour. Chill 1 hour. Roll out, cut shapes, bake at 350°F for 9-11 min.


    Royal icing: 2 cups powdered sugar + 3 tbsp milk + 1/2 tsp vanilla. Tint with food coloring.

    2. 🫚 Gingerbread Cookies


  • 3 cups GF flour
  • 1/2 cup butter, 1/2 cup brown sugar, 1/3 cup molasses
  • 1 egg, 2 tsp ginger, 1 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp baking soda

  • Mix, chill 2 hours, roll out, cut shapes. 350°F, 10-12 min. Decorate with royal icing.

  • 1.5 cups GF flour, 1/2 cup cocoa powder
  • 1 cup sugar, 1/3 cup vegetable oil, 2 eggs, 1 tsp vanilla
  • 1 tsp baking powder, 1/4 tsp salt
  • Powdered sugar for rolling

  • Mix, chill 1 hour. Roll into balls → roll in powdered sugar → bake 350°F, 10-12 min. Cookies crack beautifully like snow.

  • 1 cup peanut butter, 1 cup sugar, 1 egg, 1 tsp vanilla
