Then a friend (also celiac) told me about freezer dump meals. The concept is dead simple:


  • Spend 1-2 hours on Sunday chopping raw ingredients
  • Dump everything into labeled gallon freezer bags
  • Freeze them flat (they stack like books!)
  • On a busy weeknight: pull a bag from the freezer in the morning, thaw in the fridge, dump into your slow cooker or Instant Pot when you get home
  • Dinner is ready with zero thought, and it's 100% gluten-free

    Before You Start: The Assembly Line Method


    Don't prep one meal at a time. Set up an assembly line:


  • Lay out 10 gallon-size heavy-duty freezer bags
  • Label each bag with: Meal name, date, cooking method, cook time (use freezer-safe labels or a Sharpie)
  • Chop ALL vegetables first, then distribute
  • Measure ALL sauces/spices, then distribute
  • Add protein last
  • Squeeze out air, seal, and lay flat on a baking sheet in the freezer
  • Once frozen flat (2-3 hours), you can stack them vertically like files in a drawer

  • Total prep time for all 10 meals: about 90 minutes. That's 10 weeknight dinners handled in one Netflix episode.


    Meal 1: Honey Garlic Chicken


    The one that converts skeptics. Sweet, sticky, and tastes like takeout.


    Bag contents:

  • 2 lbs boneless skinless chicken thighs
  • ⅓ cup GF soy sauce (tamari)
  • ¼ cup honey
  • 3 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp ground ginger
  • Pinch of red pepper flakes

  • To cook: Slow cooker LOW 4 hours (add broccoli in the last 30 min for crunch). Instant Pot: 5 minutes high pressure, quick release, add broccoli and sauté 2 min.

    Meal 4: Tuscan White Bean Soup


    Hearty, warming, naturally GF.


    Bag contents:

  • 2 cans (15 oz each) white beans, drained
  • 1 can (14 oz) diced tomatoes
  • 4 cups fresh spinach
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • Salt and pepper to taste

  • To cook: Add bag contents + 4 cups GF chicken broth to slow cooker. LOW 6-8 hours or HIGH 3-4 hours.

    Bag contents:

  • 2.5 lbs pork shoulder/butt, trimmed and cut into 3 chunks
  • 1 cup GF BBQ sauce (check labels — Sweet Baby Ray's and Stubb's are generally safe)

    Meal 6: Chicken Tikka Masala

    Bag contents:

  • 2 lbs boneless chicken thighs, cubed
  • 1 can (14 oz) coconut milk
  • 1 can (6 oz) tomato paste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne (optional)
  • Salt to taste

  • To cook: Slow cooker LOW 6 hours. Instant Pot: 10 minutes high pressure, natural release 10 min.

    Meal 7: Sausage, Pepper & Potato Bake


    Comfort food, zero effort.


    Bag contents:

  • 1.5 lbs GF Italian sausage, sliced into rounds
  • 4 medium potatoes, cubed
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper

  • To cook: Thaw bag. Spread on a sheet pan. Bake at 400°F for 35-40 minutes, tossing halfway. (This one's an oven meal, not a slow cooker — perfect variety.)

    Bag contents:

  • 2 lbs bone-in chicken thighs (skin on for flavor)
  • 1 lb baby potatoes, halved
  • 2 cups green beans, trimmed
  • Juice of 2 lemons
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper

  • To cook: Thaw. Spread on a sheet pan, skin-side up. Bake at 425°F for 40-45 minutes until chicken skin is crispy and potatoes are golden.


    Finish with: Fresh parsley and a squeeze of extra lemon.


    Freezer Dump Meal Tips & Tricks


    How long do they last in the freezer?

    Most dump meals stay perfect for 3 months. After that, quality slowly declines but they're still safe. Label everything with the date.


    Can I use fresh meat or does it need to be pre-cooked?

    Most meats can go in raw — the slow cooker/Instant Pot cooks them from thawed. The exception is ground beef, which should be browned and drained first to avoid a greasy, grey mess.


    What about vegetables getting mushy?

    Hard vegetables (potatoes, carrots, onions) hold up great. Soft vegetables (broccoli, spinach, zucchini) should be added in the last 30 minutes of cooking OR kept in a separate small bag and added at cook time.


    Best bags to use?

    Use heavy-duty gallon freezer bags — NOT regular storage bags. They're thicker and won't leak or get freezer burn. If you want to go eco-friendly, reusable silicone bags work great too.


    Can I double a recipe?
