  • 1.5 lbs chicken breasts
  • 1 cup rice (rinsed)
  • 1 can black beans (drained)
  • 1 cup salsa
  • 1 cup chicken broth
  • 1 tbsp cumin, chili powder, garlic powder

  • Layer: rice on bottom → chicken → beans → salsa + broth + spices. Pressure cook HIGH 12 min. Natural release 5 min.


    Top with: Avocado, sour cream, cheese, cilantro, lime, hot sauce.

    2. 🍜 Chicken & Rice Soup (25 min)


  • 1 lb chicken breasts
  • 1 cup rice
  • 6 cups chicken broth (Pacific Foods GF)
  • 3 carrots, 3 celery stalks, 1 onion (diced)
  • 2 cloves garlic, thyme, bay leaf

  • Pressure cook HIGH 10 min. Quick release. Shred chicken. Remove bay leaf.


    Better than grandma's, and ready in 25 minutes.

    3. 🍝 One-Pot GF Pasta with Meat Sauce (15 min)


  • 1 lb ground beef
  • 1 lb GF penne
  • 1 jar marinara (Rao's)
  • 2 cups water
  • Italian seasoning, garlic powder

  • Sauté ground beef until browned. Add pasta, sauce, water. Pressure cook HIGH 5 min. Quick release. Stir. Top with Parmesan.

    4. 🥘 Butter Chicken (25 min)


  • 1.5 lbs chicken thighs, cubed
  • 1 can coconut milk
  • 1 can crushed tomatoes
  • 3 tbsp butter
  • 2 tbsp tikka masala paste (check GF!)
  • 1 tbsp garam masala, 1 tsp turmeric, 1 tsp cumin

  • Sauté chicken 2 min. Add everything. Pressure cook HIGH 8 min. Natural release.


    Serve over basmati rice. Restaurant quality for $4/serving.

    5. 🫘 Chili (20 min)


  • 1 lb ground beef
  • 1 can kidney beans, 1 can black beans
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 onion, diced
  • 2 tbsp chili powder, 1 tbsp cumin, garlic powder

  • Sauté beef + onion. Add rest. Pressure cook HIGH 10 min. Natural release.

    6. 🍲 Beef & Broccoli (20 min)


  • 1.5 lbs flank steak, thinly sliced
  • 1/3 cup tamari
  • 2 tbsp honey, 1 tbsp sesame oil
  • 3 cloves garlic, 1 tbsp fresh ginger
  • 4 cups broccoli florets (add after cooking)
  • 1 tbsp cornstarch + 2 tbsp water

  • Pressure cook HIGH 12 min (without broccoli). Quick release. Add broccoli, stir in cornstarch slurry, let thicken 3 min on sauté. Serve over rice.

    7. 🥔 Loaded Baked Potato Soup (25 min)


  • 5 large russet potatoes, cubed
  • 4 cups chicken broth
  • 1 cup cream
  • 8 slices bacon (cooked, crumbled)
  • 1 cup shredded cheddar
  • 4 green onions, sliced

  • Potatoes + broth + garlic. Pressure cook HIGH 8 min. Quick release. Mash some potatoes, leave chunks. Stir in cream + cheese. Top with bacon + green onions.

  • 1.5 cups red lentils (naturally GF!)
  • 1 can coconut milk
  • 1 can diced tomatoes
  • 4 cups veggie broth
  • 1 onion, 3 garlic cloves, 1 tbsp curry powder, 1 tsp turmeric
  • Fresh cilantro + lime to serve

  • Dump everything in. Pressure cook HIGH 10 min. Natural release.
