  • β–Ί2 tsp pure vanilla extract

  • β–Ί1 cup (2 sticks) unsalted butter, softened
  • β–Ί4 cups powdered sugar
  • β–Ί2-3 tbsp heavy cream
  • β–Ί1 tsp vanilla extract
  • β–ΊPinch of salt
  • β–ΊπŸ›’ GF sprinkles for decorating

    Step-by-Step Instructions


    Step 1: Prep the Pans

    Preheat oven to 350Β°F (175Β°C). Grease two 9-inch round cake pans, line bottoms with πŸ›’ parchment paper, and grease again. This ensures clean release.


    Step 2: Mix Dry Ingredients

    Whisk together the GF flour, sugar, baking powder, and salt in a large bowl.


    Step 3: Mix Wet Ingredients

    In a separate bowl, whisk eggs, milk, oil, sour cream, and vanilla until completely smooth.


    Step 4: Combine (Don't Overmix!)

    Add the wet mixture to the dry mixture and fold together until just combined. Stop the moment you don't see dry flour. Overmixing = gummy, dense cake.

    Step 5: Bake

    Divide batter evenly between pans. Bake for 28-32 minutes until golden on top and a toothpick comes out clean.

    Beat softened butter on high for 3 minutes until pale and fluffy. Add powdered sugar one cup at a time, beating between each addition. Add cream and vanilla, beat until smooth. If too thick, add more cream 1 tsp at a time.


    Step 8: Assemble

    Place first layer on a plate. Spread a thick layer of frosting on top. Add second layer. Frost the top and sides. Add sprinkles and any decorations.
